This one is so simple and delicious. Give it a whirl, you won't regret it!
-Tub of good quality vanilla ice cream
-2 cups apple cider vinegar
-1 cup coconut sugar
-5 tablespoons salted butter or coconut oil
-3/4 cup cream or coconut cream
-1/2 teaspoon cinnamon powder
-1teaspoon vanilla extract
-1 pinch salt
Start the cider caramel sauce by adding the apple cider vinegar to a sauce pan over a medium heat and bring to the boil.
Boil the apple cider vinegar until it has reduced significantly - to around 1/4 cup.
Reduce the heat to low and add the cream, butter, sugar and cinnamon.
Increase the heat to medium again and cook for around 10 minutes or until the sauce thickens and darkens in colour.
Take off the heat and add vanilla and salt, stir, and allow to cool.
Leave your ice cream on the bench to soften for around 20 minutes while the caramel sauce cools.
Add Nib + Noble Nourish Granola and dollops of cider caramel sauce to your ice cream and you are good to go! Enjoy.
