Raw Chocolate Coconut Slice

Be the hit of the party with this amazing chocolate coconut slice! 

This melt in your mouth organic chocolate slice is not only Raw, Vegan and Gluten Free, its sure to set your mind free into a magic place!

Ingredients

Biscuit
1 cup almond meal
2 tbsp coconut oil
1/2 cup coconut
1/2 tsp vanilla extract
2 tbsp rice malt syrup
pinch of salt

Slice
2 cups almonds
3 tbsp desiccated coconut
3 tbsp N+N original drinking chocolate
6 tbsp coconut sugar
3 tbsp coconut oil1
1/2 pitted dates 
1 tsp vanilla extract

Chocolate Topping
3 tbsp N+N original drinking chocolate
2 tbsp coconut sugar
2 1/2 tbsp rice malt syrup
3 tbsp coconut oil (melted)
1/2 tsp vanilla extract
pinch of salt

Extras
85grams pecans, chopped roughly
70grams shredded coconut

 

 

Method

  1. Line a square cake tin with baking paper. Approx 21cm x 21cm.
  2. Place all the biscuit ingredients into a food processor and blend until well combined. Transfer mixture to a bowl and set aside.
  3. Blend in a food processor almonds, coconut, N+N original drinking chocolate and coconut sugar. Once combined, add the wet ingredients, coconut oil, vanilla extract and dates (drained after soaking). When the mixture is well combined and sticking together, transfer into a bowl. 
  4. Add the chopped pecans and shredded coconut to the slice mixture and roughly mix. Once combined press the slice mixture firmly into your prepared tin while carefully adding chunks of the biscuit throughout the slice mixture. Place in freezer while preparing the chocolate topping. 
  5. For the chocolate top, mix together all the ingredients until well combined and spread evenly over the slice. Place the slice in the fridge to set for roughly 30minutes.
Cut into slices and enjoy!

    Notes

    • As an addition, sprinkle desiccated coconut on top of the slice.
    • Always keep slice in the fridge/chilled so that it stays firm.
    • Organic Ingredients used where possible.
