If you are craving something sweet but still made with wholesome ingredients, this slice recipe is an absolute winner. The combination of the crunchy granola base with the sweet and smooth caramel filling is so satisfying and really hits the spot. Enjoy and you can thank us later!
Ingredients
Granola base and topping
- 3 cups Nib + Noble Nourish Cacao Granola
- ½ cup Nib + Noble coconut sugar
- 125 g coconut oil
Caramel filling
- 4 tablespoons rice malt syrup
- 60 g coconut oil
- 1 can of coconut condensed milk
Method
- Turn oven onto 170 degrees celsius
- Add granola, coconut sugar and coconut oil to food processor and process until very fine and crumbly.
- Press two thirds of the mixture into a lined tin. Bake for 12-15 minutes or until golden. Remove from oven and allow to cool while you make the caramel.
- To make the caramel filling, place coconut oil and rice malt syrup in a pot and stir over a low heat until the coconut oil has melted. Turn off the heat and add the coconut condensed milk. stir until smooth.
- Pour caramel over the granola base and smooth it over, then dot with the remaining crumble mixture and sprinkle with a little extra granola. Return to oven to bake for a further 20 minutes or until the topping is nice and golden and the caramel is darkening a bit at the edges. Remove from oven and leave to cool before placing in the fridge to set. Once it has set cut into pieces. Makes approx 12 pieces.
